Chicken manure is very dry,contains high concentration of salt and can release plenty ammonia as well , making it a very dangerous material when fresh . However,you can amend it by adding water ,soaking it and allowing it to age for awhile . What is vermiculture, breeding of worms. Worms take protein from the waste materials to build their bodies. This is the important point, for protein read nitrogen. The very thing you wish in your organic fertilizer is now locked in the bodies of the worms. Those worms carry the nitrogen away.

Compost can be made fast 2 to 3 weeks. Every element in the original material is still there, including nitrogen.
With vermiculture that is not the case.
